Ginger Swordfish, Apple & Couscous
Salad with Ginger Lemon Grass Dressing
2/3 lb. swordfish, cubed,
skewered
1 cup couscous, uncooked (or rice, if couscous is unavailable)
¼ cup golden raisins
1 apple, cored and diced
1 bunch cilantro, chopped
2/3 cup Ginger Lemon Grass Dressing
Prepare fire for the grill
or barbecue. Cook couscous according to instructions. When done, add
Ginger Lemon Grass Dressing, raisins, apple and cilantro to couscous.
Toss. Keep warm. Grill swordfish skewers 3-4 minutes. Place on top of
couscous, sprinkle with cilantro and serve.
