Ginger-Chocolate Chip Cookies
Ingredients
1 cup + 2 tablespoons all-purpose flour
1/2 cup quick cooking oats
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1/4 cup sugar
1/2 cup packed light brown sugar
1 large egg
1 1/2 teaspoon vanilla extract
7oz (1 tin) crystallized ginger chips (Brand: The Ginger People®)
4oz semi-sweet chocolate chips
Preheat oven to 350°F. Grease cookie sheets. Mix together flour,
oats, baking powder and salt. Set aside. At medium speed, beat butter
and sugars until well blended. Add egg and vanilla extract. Stir flour
mixture into butter mixture until smooth. Stir in crystallized ginger.
Add chocolate chips if desired. Heap teaspoonsfuls of dough onto cookie
sheets, space 2 inches apart. Bake 12-15 minutes, or until light brown.
Remove sheet and let stand until cookies firm slightly, about 2 minutes.
Transfer cookies to rack to cool. Makes 3 dozen.
